Lisa's Pioneer Hard Tack

(Hard tack is similar to a dense biscuit. It was prepared ahead of time for long journeys. It was used by seafaring groups and pioneer companies to serve as their bread staple. These ingredients were listed in the journals of the U.S. Army "Mormon Battalion" that came to San Diego in January, 1847. This is Lisa’s modern way of preparing it. Makes forty-eight  1 ½” squares.)

4 C  flour

2 tsp.  salt

5 tsp.  sugar

1 ¼ C  water

  

 

Mix all ingredients together to form a stiff dough. Prepare work table by moistening with water and covering with plastic wrap. Place dough on this surface, cover with a top layer of plastic wrap and roll out dough into a large rectangle that is ¼” thick. (Rolling it out between plastic wrap keeps the dough softer.) Place dough on greased baking sheet.  Cut into 48, 1 ½” square shapes, or shapes of your choice, and prick with fork.  Bake at 400 degrees for 10-12 minutes.

Blender Wheat Pancakes

 

(Makes 6-8 pancakes. Adapted from providentliving.org)

 

1 ¼ cup water

1 cup whole wheat kernals

2 eggs

2 Tbl. oil

2 Tbl. honey or sugar

2 tsp. baking powder

2 Tbl. powdered milk

1/2 tsp. salt

 

Put water and wheat in blender. Blend on highest speed for 4 or 5 minutes or until batter is smooth. Add eggs, oil, sweetener, baking powder, powdered milk and salt. Blend on low. Bake on hot griddle.

 

For Waffles:  Add one additional tbsp. wheat; increase oil to 4 tbsp.

 

Fruit Juice Syrup

 

2 cups juice

2 Tbl. cornstarch

1/4 cup sugar

 

 

(Optional spices for apple juice--add a dash of cinnamon and a little lemon juice.)

 

Using a wire whisk, combine ingredients in saucepan. Bring to boil and stir for 2 minutes. Add optional spices and a little butter to taste.

 

 

Berry Special Sauce

 

2 cups mixed berries

1/2 cup sugar

2 Tbl cornstarch

2 Tbl lemon juice

 

 

Combine all ingredients in medium saucepan. Bring to a boil and cook for 2 minutes.
